Inflammation causes

Just a quick post to say that I’ve discovered the cause of some of my inflammation problems–my GF bread, which used bean flour, potato starch and egg replacer which has potato starch was causing the problem. 

Nightshade vegetables are a common cause of arthritis inflammation, and I was getting potatoes several times a day in the form of potato starch.  I think it must have sensitized me to the solanine in the nightshade vegetables.  I can no longer eat any vegetables from that family.  When I eat them I have inflammation and pain from the fingertips on my right hand, up my right arm, up the right side of my neck and up over the right side of my head and my right eye.  It was also causing bloating, lethargy and emotional upset.  For now I have completely eliminated tomatoes, potatoes, and peppers.

Beans, when eaten in excess, can cause gout, which is arthritis.  I was using bean flour in my bread and now when I eat beans or the bread with bean flour I have pain and inflammation in both hands and feet.

Things I was already allergic to also cause pain and inflammation–eggs, cow dairy, sunflower oil, etc.  I don’t think I will ever be able to eat those again. 

Now that I am not eating these I feel much better.  I hope to be able to add beans and tomatoes back in after about six months or so.  If it is possible to get rid of food sensitivities, 6 months usually does it.  If it doesn’t go away after that, it probably won’t.   

I accidentally ate some gluten at Rob’s work Christmas party and was in pain for several days afterwards, which only confirmed to me that I do have celiac disease.  I then added to my trouble by drinking tea which had natural flavor in it (a common gluten source).  I am under the care of a GI who is trying to get me a firm diagnosis.  Maybe all these accidental intakes will help him confirm it.  He asked me if I’d be willing to eat gluten for a while until he does the endoscope.  I told him I had a mini-stroke when I ate gluten before and he agreed I probably shouldn’t start eating it again.  So we’ll see if he can find anything. 

I hope this info will be useful for someone else struggling with these same issues, so that is why I share it here.
