Finding out that you have Celiac Disease can be devastating. It can make you feel like a child when it comes to cooking know-how. How do you make your favorite foods? Is it even possible?
I’ve been there–I found out I had Celiac Disease early in 2007. Before that I had been developing many whole grain recipes which our family enjoyed, and starting over seemed like a daunting task. After a short cry, I read as much as I could about gluten-free baking and started over again.
Gluten-free cooking takes a little getting used to, but it isn’t hard. And it tastes really good too–especially if you don’t use rice flour! Our family loves rice, but we do not like baked goods that have rice in them.
